بررسی کیفیت و عمر انباری ارقام انگور ترکمن و مقایسه آن با رقمهای محلی
انگور میوهای نافرازگرا است کهمیزان فعالیت فیزیولوژیک آن پایین است، اما در معرض کاهش شدید آب قرار دارد. انگور عمر انباری کوتاهی دارد و پس از دو تا سه روز، مشکلاتی مثل خشک شدن و قهوهای شدن ساقه، ریزش حبهها و حتی چروکیدگی و پلاسیده شدن حبهها و در برخی موارد آسیبهای میکروبی در آن بهوجود میآید. با توجه به افزایش تقاضا برای مصرف تازهخوری انگور، ارقام و نمونههای جدیدی که بتوانند از نظر خصوصیات کیفی با نمونههای موجود رقابت کند و عمر انباری بالاتری نیز داشته باشند، شدیداً مورد توجه هستند. پس از وارد کردن 8 رقم انگور اهدایی ترکمنستان، این ارقام به مدت 6 سال در باغ به حالت قرنطینه نگهداری و سپس در ایستگاه طرق مرکز تحقیقات کشاورزی و منابع طبیعی خراسان رضوی کشت گردید. کیفیّت و قابلیّت انبارداری این نمونهها در این پروژه مورد بررسی قرار گرفت و در نهایت ارقام ترکمن با ارقام داخلی مقایسه شدند. بر همین اساس این هشت رقم در کنار ارقام داخلی (کج انگور، کلاهداری و رزقی) کشت شدند و پس از برداشت محصول، بستهبندی و نگهداری در سردخانه، خصوصیات کیفی و کمّی و عمر انبارداری این نمونهها بررسی و مقایسه شد. نتایج نشان داد که ارقام ترکمن خصوصیات کیفی و کمّی مناسب و از همه مهمتر عمر انباری بالایی دارند و میتوانند به عنوان ارقام جدید معرفی و استفاده شوند.

ارزیابی اثر فراصوت و دما بر ویژگیهای کریستالی و میکروسکوپی گرانولهای نشاستۀ برنج معلق در آب به روش سطح پاسخ (RSM )
نشاسته منبع اصلی انرژی در رژیم انسان است. اصلاحات فیزیکی، شیمیایی و آنزیمی میتواند باعث تغییراتی گردد که در نشاستههای طبیعی تجاری موجود، قابل دسترس یا قابل کنترل نیست لذا در این تحقیق از فراصوت برای بررسی اثرروشهای فیزیکی بر خصوصیات کریستالی و خمیری نشاستۀ برنج استفاده شد. در این تحقیق، به دیسپرسیون نشاستۀ برنج (8 درصد) فراصوت داده شد و برای مطالعه تغییرات ریختشناسی برنج میکروسکوپ الکترونی روبشی (SEM) و میکروسکوپ نوری مورد استفاده قرار گرفت. برای بررسی بخشهای کریستالی نشاستهها، نمونههای خشک شده با استفاده از پراش اشعۀ ایکس (XRD) آنالیز شدند. برای ارزیابی تأثیرات سه متغیر دمای فرآیند (65-45 درجۀ سلسیوس)، مدت زمان (300-10 ثانیه) و دامنۀ فراصوت (100-0 درصد) بر خصوصیات کریستالی و میکروسکوپی نشاستۀ برنج، از روش سطح پاسخ (RSM) استفاده شد. یافتهها نشان داد که فراصوت تغییری در الگوی پراش اشعۀ ایکس (نوع A) ایجاد نمیکند و با افزایش دما و زمان، درجۀ کریستالی روند کاهشی به خود میگیرد. در دماها و دامنههای فراصوت بالا تمایل برای کاهش درجۀ کریستالی نشاستۀ برنج مشاهده شد. افزایش همزمان دما، زمان و دامنۀ فراصوت، و ایجاد سوراخ و شکاف در سطح گرانولها احتمالاً به واکنشگرها اجازه نفوذ راحتتر میدهند و باعث افزایش سرعت واکنشهای شیمیایی میشوند.

خواص حرارتی، نفوذپذیری نسبت به بخار آب و مورفولوژی بیونانوکامپوزیتهای پلی لاکتیک اسید (PLA)
هدف مطالعه حاضر توسعه نانوکامپوزیتهای جدید بهبود یافته بر پایه بیوپلیمر پلیلاکتیکاسید (PLA) است. برای رسیدن به این هدف، نانو کامپوزیتهای PLAبا استفاده از نانوذرات رسی و سلولزی در سطوح مختلف با روش کستینگ تهیه شدند و خواص حرارتی، نفوذپذیری نسبت به بخار آب (WVP) و ساختار آنها ارزیابی شد. نتایج آزمون حرارتی (DSC) نشان میدهد که نقطه انتقال شیشهای (Tg)، نقطه ذوب (Tm) و درصد کریستالیزاسیون (χ%)PLA خالص، به ترتیب 83/53، 95/153 درجة سلسیوس و 36/41 درصد است. در اثر الحاق نانوذرات رس، نقطه انتقال شیشهای و درصد کریستالیزاسیون روند صعودی دارند در حالیکه نقطه ذوب تغییر محسوسی نشان نمیدهد. نانو ذره سلولز میکروکریستال به دلیل ناسازگار بودن با بستر پلیمری تأثیری بر خواص حرارتی ندارد. نفوذپذیری نسبت به بخار آب در PLAخالص بالاست که با افزودن نانوذرات رس به آن، به شدت کاهش مییابد به طوریکه در نمونه حاوی 7 درصد به مقدار 11-10X 92/0 رسیده است. سلولز میکروکریستال (MCC) به دلیل ماهیت آب دوست بودن، منجر به افزایش چشمگیر نفوذپذیری به بخار آب فیلمها گردید. تصاویر SEMتهیه شده از نمونهها نیز نتایج قبلی را تأیید میکنند.

بررسی موازنه آب خاک، تاریخ کاشت و عملکرد گندم با استفاده از مدل AquaCrop در شرایط دیم و آبیاری محدود
مدلهای شبیهسازی، به دلیل ارائه تأثیرات کمّی آب بر عملکرد محصول، ابزاری ارزشمند برای بهبود مدیریت مصرف آب در مزرعه و فزونی بهرهوری آب هستند. مدل AquaCrop که سازمان خوار بار و کشاورزی جهان (فائو) آن را توسعه داده است، قابلیت بررسی روند تولید را تحت گزارههای مختلف دارد. در این تحقیق بهمنظور ارزیابی کارایی نرمافزار AquaCrop از دادههای دو سالۀ گندم دیم (86-1384) حاصل از یک طرح تحقیقاتی در بالادست حوضۀ کرخه (استان لرستان) استفاده شده است. آزمایشهای مزرعهای شامل: دیم، یک نوبت آبیاری در زمان کاشت و یک نوبت آبیاری در بهار بود که در مزارع کشاورزان اجرا شد. کاربرد نرمافزار AquaCrop در تحلیل نتایج مزرعهای آزمایشهای آبیاری محدود گندم دیم، حاکی از قابلیتهای این نرمافزار در برآورد عملکرد، موازنۀ آب خاک و درصد پوشش گیاهی است. میانگین انحراف نرمال شده مقادیر شبیهسازی شده از مقادیر اندازهگیری شدهبرای درصد پوشش گیاهی، مقدار آب خاک و عملکرد دانه به ترتیب برابر 53/8، 34/10 و 34/8 درصد بهدست آمد که مطلوب به نظر میرسد. ضریب کارآیی مدل در تخمین عملکرد، موازنۀ آب خاک و درصد پوشش سبز به ترتیب 93/0، 78/0 و 92/0 است. شاخص سازگاری نزدیک به یک است که نشان از سازگاری مقادیر رطوبت آب خاک، عملکرد دانه و درصد پوشش گیاهی در مدل با مقادیر واقعی دارد. این مدل تخمین تاریخ مناسب کاشت را برای شرایط دیم فقط منوط به عامل بارش و وقوع میزان مشخص آن کرده است و از اینرو نمیتواند برای مناطق سرد و نیمهسرد کارآمد باشد، اما در بقیه موارد نتایج نشاندهنده توانمندی مدل در تخمین مناسب عملکرد تحت شرایط دیم و آبیاری محدود است.

ویژگی های هیدرولیکی کپسول های سفالی سامانه آبیاری زیرسطحی در سه بافت خاک
با توجه به ابعاد جهانی کمآبی، بهویژه در مناطق خشک و نیمهخشک جهان، کمیتۀ بینالمللی آبیاری و زهکشی (ICID) در هشتمین کنگرۀ بینالمللی آبیاری میکرو سال 2011 در ایران، توسعۀ روشهای آبیاری میکرو زیرسطحی را بهعنوان جهتگیری جهانی،توصیه کرده است. در سالهای اخیر بهدلیل وجود خشکی و بروز خشکسالیهای متعدد در کشور، روش آبیاری زیرسطحی سفالی مورد توجه کشاورزان، کارشناسان و محققان قرار گرفته است. اگرچه این روش آبیاری، سنتی است و نسبت به سایر روشهای آبیاری زیرسطحی مزایا و معایب خاص خود را دارد، اما بهنظر میرسد بتوان با تغییرات و تمهیداتی در مکانیزم این روش آبیاری، کاربردهای مناسبی برای آن در کشور توصیه کرد. در سیستم آبیاری زیرسطحی سفالی، چگونگی عملکرد هیدرولیکی کپسولهای سفالی یکی از عوامل اصلی تعیینکننده کارآیی سیستم است. در این پژوهش، دو رابطه یکی آبدهی-زمان و دیگری آبدهی- فشار کپسولهای سفالی ارائه شدهاند که در سیستم آبیاری زیرسطحی استفاده میشوند. این آزمایشها در سه نوع بافت متفاوت خاک لوم شنی، لوم رسی سیلتی و رسی سیلتی و در شرایط صحرایی اجرا شده است. سیستم آزمایشی در قالب طرح اسپلیت پلات با بلوکهای کاملا تصادفی طراحی و اجرا شد. کرت اصلی شامل سه بافت خاک و کرت فرعی شامل سه فشار کارکرد حاصل از ارتفاعهای متفاوت آب سفال با سه تکرار در نظر گرفته شد. نتایج اندازهگیری طی سه ماه و با سه فشار حاصل از دو، سه و چهار متر ارتفاع آب نشان میدهد که آبدهی روزانه سفال بهطور معنیداری تحت تأثیر بافت خاک قرار میگیرد. همچنین، فشار کارکرد سفال تأثیر معنیداری در آبدهی سفال در هر سه خاک دارد. نتایج اندازهگیری رابطۀ آبدهی- فشار کپسولهای سفالی با هفت فشار کارکرد 5/1، 2، 5/2، 3، 5/3، 4 و 5/4 متر حاصل از ارتفاع آب در هر سه نوع خاک طی مدت دو هفته نشان میدهد که بین این دو عامل طراحی سیستم آبیاری، رابطۀ غیرخطی (توانی) برقرار است و بهترین فشار کارکرد کپسول سفالی برای هر سه خاک فشاری است که از ارتفاع ، 4- 5/3 متر آب به دست میآید.

مقایسه سه نوع کمباین متداول برنج در منطقه مازندران
در کشورهای توسعه یافته،کمباینهای برداشت برنج با عرض کارهای مختلف در دو نوع خوشه تغذیه و بوته تغذیه در دسترس هستند. در سالهای اخیر هر دو نوع کمباین برنج از کشورهای آسیای شرقی از جمله چین، ژاپن و کره جنوبی وارد کشور شده ولی عملکرد آنها از نظر فنی و اقتصادی بررسی یا ارزیابی نشده است. این تحقیق، به منظور رسیدن به هدف فوق و انتخاب ماشین مناسب برداشت انجام شد. تیمارهای مورد ارزیابی عبارت بودند از: 1- کمباین خوشه تغذیه دو ردیفه ISEKI، 2-کمباین خوشه تغذیه سه ردیفه KUKJEو 3-کمباین بوته تغذیه JIANGSU. این تحقیق در قالب آزمایش بلوکهای کامل تصادفی و با 3 تکرار در مزرعه مرکز توسعه وتکنولوژی هراز (کاپیک) به اجرا درآمد. نتایج نشان میدهد که در سطح احتمال 5 درصد بین تیمارهای آزمایشی از نظر درصد ضایعات، جریان جرمی، ظرفیتهای نظری و مؤثر و هزینههای برداشت محصول در هکتار، اختلاف معنیداری وجود دارد ولی از نظر درصد لغزش، بین آنها اختلاف معنیدار نیست. از نظر بازده مزرعهای، کمباین بوته تغذیه با 9/65 درصد در گروه الف، کمباین سه ردیفه KUKJEبا 36/48 درصد در گروه ب و کمباین دو ردیفه ISEKIدر گروه آخر قرار گرفت. از نظر بالا بودن میزان ضایعات، کمباین بوته تغذیه با 74/1 درصد تلفات دانه (بدون احتساب ریزش طبیعی) در گروه اول و سایرکمباینها در گروه بعد قرارگرفتند. کمباین بوته تغذیه نسبت به دو کمباین دیگر دارای کمترین هزینه برداشت به ازای هر هکتار شالیزار است. با توجه به نتایج بهدست آمده، از نظر فنی و اقتصادی، استفاده از کمباین بوته تغذیه بهمنظور برداشت برنج توصیه میشود.

مطالعه جریان در تبخیرکننده صفحهای تغذیه پیشرو با استفاده از مدلسازی دینامیک سیال
تغلیظ موجب کاهش درصد آب موجود در مواد غذایی مایع و افزایش عمر مفید آنها میشود. تغلیظ به روشهای مختلف به کمک تبخیرکنندهها انجام میشود. برای کنترل فرایند تبخیر، مطالعه و شبیهسازی رفتار دینامیکی تبخیرکنندهها، قبل از طراحی و ساخت آنها، ضروری است. در این تحقیق فرایند تغلیظ آب انار از 18 به 50 درصد، بهصورت یک مدل دو فاز مخلوط در یک تبخیرکننده صفحهای جریان اجباری تغذیه پیشرو، با استفاده از نرمافزار فلوئنت، شبیهسازی شده است. بر اساس نتایج بهدست آمده، مکش در ستون تبخیر توسعه مییابد و تنها در ابتدای مسیر، از ورودی تا فاصلۀ حدود 20 سانتیمتری از ورودی، مقداری افت فشار وجود دارد. روند تغییر دما نشانگر افزایش دما در ستون تغلیظ است، که در ابتدا با شدت زیاد و با ادامه یافتن فرایند، با شدت کمتری رخ میدهد. با ادامۀ جریان بخار بهسمت خروجی، مقدار متوسط سرعت افزایش مییابد. بررسی تغییرات شعاعی اندازه سرعت نشاندهنده حداکثر سرعت در وسط محیط جریان و کاهش تدریجی آن تا مرزهای جداره واحد تغلیظ است. در ستون تغلیظ، جزء حجمی آب انار بهتدریج کاهش اما جزء حجمی بخار افزایش مییابد. نتایج حاصل از این مدلسازی قابل تعمیم برای محصولات مایع دیگر نیز هست، اما ضرورت دارد ویژگیهای حرارتی- فیزیکی مایع مورد نظر را در سطوح مختلف غلظت برای نرمافزار تعریف کرد.

ساخت و ارزیابی دستگاه گردوشکن تک پوستهای خمرهای
گردو یکی از محصولات مهم خشکباری دنیاست و سطح زیر کشت آن هر ساله رو به فزونی است. بر اساس آمار سازمان خواروبار و کشاورزی جهان (FAO)، میزان صادرات این محصول در سال 2008 حدود 17/1 میلیارد دلار بوده است. ایران منشا تولید گردو و سومین کشور تولیدکننده این محصول در دنیاست. توجه به مراحل مختلف از تولید تا مصرف گردو بسیار با اهمیت است. از آنجا که مغز گردوی با کیفیت بسیار بالا بازارپسندتر است، لذا شرایطی که بتواند این موضوع مهم را عملی سازد بسیار ارزشمند خواهد بود. برای دستیابی به این هدف، دستگاه گردوشکن تک پوستهای خمرهای ساخته و ارزیابی شد. به همین منظور نحوه شکستن محصول و کیفیت مغز آن در چهار گروه اندازهبندی متفاوت، چهار دور روتور دوار دستگاه و در چهار سطح رطوبتی با سه تکرار در هر نمونه بررسی شد. نتایج پس از ویرایش دادهها بهصورت آماریتجزیه و تحلیل و مشخص شد که مغز گردوی با کیفیت بالا در سطح رطوبتی 10 تا 14 درصد، سرعت280 دور بر دقیقه روتور دوار دستگاه و از گردوهایی بهدست میآید که قطر بزرگتر آنها 75/31 تا 55/30 میلیمتر باشد.
