چکیده

ماست یکی از مهمترین فرآورده‌های لبنی است که در جوامع بشری مصرف می‌شود. بنابراین بالا بردن سطح کیفی این محصول اهمیت ویژه‌ای دارد. برخی از سویه‌های باکتری اسید لاکتیک که در تهیه ماست تخمیری به عنوان آغازگر به کار می‌روند، پلی‌ساکارید خارج سلولی تولید می‌کنند که می‌تواند ویژگی‌های بافتی محصول را بهبود بخشد و جایگزین مناسبی برای قوام دهنده‌ها در تولید ماست به شمار آیند.
در این پژوهش، اثر سه نوع آغازگر تجاری تولیدکننده پلی‌ساکاریدهای خارج سلولی ساکو (Saco)، هانسن (Hansen)، فرمنتوتک (Fermentotec) بر ویژگی‌های فیزیکی (آب‌اندازی)، رئولوژیکی (گرانروی و سفتی) و حسی نمونه‌های ماست تهیه شده با آغازگرهای تجاری گفته شده در دوره‌ای 21 روزه ارزیابی شد.
در پایان دوره معلوم شد نمونه‌های تهیه شده با آغازگر شرکت فرمنتوتک پایدارترند و گرانروی و سفتی بیشتری نسبت به نمونه‌های تهیه شده با آغازگر شرکت‌های هانسن و ساکو دارند. نمونه‌های تهیه شده با آغازگر فرمنتوتک سفت‌ترند و پیوستگی و چسبندگی بیشتری نسبت به دو نمونه تهیه‌شده با آغازگر دیگر دارند. ماست‌های ساخته شده با آغازگر پلی‌ساکارید خارج سلولی فرمنتوتک آب‌اندازی کمتری نسبت به ماست تولید شده با آغازگر پلی‌ساکارید خارج سلولی ساکو و هانسن دارد. نتایج پژوهش همچنین نشان می‌دهد که مدل کراس بهترین برازش را برای هر سه محصول دارد. استفاده از آغازگر فرمنتوتک می‌تواند در بهبود کیفیت ماست همزده مؤثر باشد.

The Effect of Commercial Exopolysaccharide-Producing Starters on the Rheological Properties of Stirred Yoghurt

Yoghurt is one of the most important dairy products consumed in human society. So, increasing the quality of yoghurt is very important. Several strains of lactic acid bacteria, used as starter cultures to make yoghurt products, produce exopolysaccharides that can improve the textural properties of the products. In this study, the physical (syneresis), rheological (viscosity and firmness), and sensorial properties of yoghurt samples produced with exopolysaccharide-producing starter cultures (Hansen, Saco, and Fermentotec) were investigated during 21 days of storage. Samples with Fermentotec starter culture had lower syneresis and were more viscous and firm than those made with Hansen and Saco starter cultures, and yoghurts produced with Fermentotec starter were whiter, firmer, and more cohesive and adhesive than samples produced with Hansen and Saco. Results showed that the Cross model is the best-fitting model for three types of products. Fermentotec starter is recommended for improving the quality of stirred yoghurt.
