چکیده

در این پژوهش، یک سامانه حسگر خازنی صفحات موازی برای ارزیابی غیرمخرب میزان رسیدگی گوجه‌فرنگی طراحی، ساخته و ارزیابی شد. هدف اصلی، بررسی قابلیت سامانه در برآورد ویژگی‌های کیفی و فیزیکی–شیمیایی میوه بر اساس تغییرات ضریب دی‌الکتریک بود. نمونه‌های گوجه‌فرنگی رقم PS در سه سطح قطری (کمتر از 4، 4 تا 6 و بیشتر از 6 سانتی‌متر) انتخاب و به‌صورت کاملاً تصادفی مورد آزمایش قرار گرفتند. ظرفیت خازنی نمونه‌ها با استفاده از مدار RC و برد آردوینو UNO اندازه‌گیری شد. همچنین ویژگی‌های فیزیکی (ابعاد و جرم)، مکانیکی (سفتی بافت) و شیمیایی (اسیدیته و مواد جامد محلول کل) در شرایط آزمایشگاهی تعیین شدند. تجزیه و تحلیل داده‌ها در قالب طرح کاملاً تصادفی و با استفاده از نرم‌افزار SAS انجام گرفت و اثر عوامل فاصله صفحات و قطر نمونه‌ها با آزمون ANOVA و مقایسه میانگین LSD در سطح 5 درصد بررسی شد. نتایج نشان داد که قطر میوه اثر معنی‌داری بر اغلب ویژگی‌های فیزیکی و شیمیایی داشت، در حالی که فاصله صفحات عمدتاً بر پاسخ دی‌الکتریک تأثیرگذار بود. همچنین اثر متقابل این دو عامل بر ضریب دی‌الکتریک در سطح 1 درصد معنی‌دار بود که نشان‌دهنده حساسیت بالای سامانه طراحی‌شده است. افزایش قطر میوه منجر به افزایش ضریب دی‌الکتریک و کاهش شاخص‌هایی مانند بریکس و استحکام شد. در مقابل، تغییر فاصله صفحات تأثیر مستقیمی بر ویژگی‌های فیزیکی و شیمیایی نداشت. به طور کلی، نتایج نشان داد که سامانه خازنی طراحی‌شده قابلیت مناسبی برای ارزیابی غیرمخرب میزان رسیدگی گوجه‌فرنگی داشته و می‌تواند به عنوان روشی سریع، کم‌هزینه و دقیق در کاربردهای پس از برداشت مورد استفاده قرار گیرد.

Design and Evaluation of a Capacitive Sensor System for Non-Destructive Determination of Tomato Ripeness

چکیده [English]

In this study, a parallel-plate capacitive sensor system was designed, developed, and evaluated for the non-destructive assessment of tomato ripeness. The primary objective was to investigate the system's capability to estimate the quality and physicochemical characteristics of tomatoes based on variations in their dielectric properties. Tomato samples were classified into three diameter groups and tested under a completely randomized design. The capacitance of the samples was measured using an RC circuit integrated with an Arduino UNO board. In addition, physical properties , mechanical properties and chemical properties (pH, titratable acidity, and total soluble solids) were determined under laboratory conditions. Data were analyzed using SAS software within a completely randomized design framework. The effects of plate spacing and sample diameter were evaluated through analysis of variance (ANOVA), and mean comparisons were conducted using the LSD test at the 5% significance level. The results indicated that fruit diameter had a significant effect on most physical and chemical properties, whereas plate spacing primarily influenced the samples' dielectric response. Moreover, the interaction effect of plate spacing and fruit diameter on the dielectric constant was significant at the 1% probability level, demonstrating the high sensitivity of the developed sensor system. Increasing fruit diameter increased the dielectric constant and decreased parameters such as (°Brix) and firmness. In contrast, variations in plate spacing did not significantly affect the physical and chemical characteristics of the samples. Overall, the findings demonstrated that the proposed capacitive sensing system is a promising tool for the non-destructive evaluation of tomato ripeness.
